Lemon Cheesecake Bars

l love lemon! Anything lemon!! Lemon bars, lemon pudding, etc.  So I have been baking most of the day coming up with new fun recipes to replace some of my favorites with a cleaner and healthier version. Let me say, I think I out did myself on this one.

Lemon Cheesecake Bars

5g Carbs
8g Protein
4g Fat
2g Sugar
3g Fiber


Crust Ingredients:

2 Large Eggs
1/2 cup Almond Flour
1/2 TBS Cinnamon
1/3 cup baking Stevia
1/2 cup Coconut Oil
1/4 TSP Salt
1/2 TSP Baking Powder

Pre-heat Oven to 325

Mix together and add extra coconut oil if it seems too dry. I actually doubled the crust ingredients but it is because I wanted a little thicker crust. Up to you.

Bake at 325 for 20 minutes.

While you’re baking the crust……

Lemon CheeseCake Ingredients:

3 1/3 fat of cream cheese
3 large eggs
1 cup Baking Stevia
1 tsp vanilla
1 TBL lemon or fresh squeezed lemons – I added a little more for the extra lemon taste.

Mix all in a mixer. Take the crust out of the oven, pour the cheesecake mix on the crust bake for 45 minutes. Then take out refrigerate for 2 hours. Add lemon zest on top!
